Huevos Rancheros is the perfect Mexican style breakfast dish that you can make cheaply and quickly. You’ll find a lot of variations of this recipe all over the internet but this ‘cupboard raid’ version is so simple there’s hardly any cooking involved!

Cooking time: 10-12 minutes (plus time to add toppings)

Ingredients
1 x tin of taco mixed beans (this recipe used Asdas own which comes in a yummy spicy tomato sauce) – 65p
2 x free range eggs per person – 6 pack £1.50
1 x white tortilla wrap per person – 8 pack 95p
Pinch of paprika – 85p
Pinch of crushed chilli flakes – 85p
For serving: jalapenos £1.20, no fat natural yoghurt 90p, cheese £1.90 to taste
Total cost: £8.80 (You can technically make 3 portions at £2.93 per person from these ingredients)
Method
- Preheat the oven to 200°C, fan oven 180°C
- Fill an oven dish with the tin of taco beans
- Make indents in the beans for as many eggs as you are cooking (2 for one person, 4 for two, etc)
- Sprinkle a pinch of paprika and a pinch of crushed chillies over the top of the beans and eggs
- Place oven dish into the oven, allow eggs to bake for 8-10 minutes
- Remove the baked eggs and beans from the oven and place a tortilla wrap in the oven for 2-3 minutes
- Remove the tortilla from the oven when its nice and crispy and place on a plate ready to start building your huevos rancheros
- Spread the beans and eggs over the tortilla and add any toppings to your taste (I chose jalapenos, natural yoghurt and cheese)
- Serve and enjoy!
